How to photograph Indian curry without a studio

The brown problem, oily sheen, texture that fades at thumbnail size: we break down every curry-specific photography challenge and show how Indian restaurant owners can fix it with a phone, good light, and the right garnish.

Indian curry is one of the most ordered cuisines on delivery platforms across the Netherlands and Belgium, and one of the most poorly photographed. The dish itself is not the problem. Butter chicken, dal makhani, lamb rogan josh are complex, layered, deeply coloured dishes. The problem is that the camera does not see them the way the eye does. On a phone screen, under a warm restaurant bulb, every curry collapses into a brown oval in a brown bowl with a brown background. The Indian curry brown problem and why it happens

The technical name is low chromatic contrast. Curry sauce, cooked onion, caramelised tomato and toasted spice all sit in the same orange-brown band of the colour wheel. When you photograph from above under diffuse light, those tones merge. The result looks less like a dish and more like a jar of paste.

This is not a camera problem. It is a styling problem, and food photographers who specialise in brown foods consistently point to the same diagnosis: brown food needs a deliberate colour strategy before you pick up the camera, not a filter afterwards.

The starting point is complementary contrast. Orange-brown curry sits opposite blue-green on the colour wheel. A teal-coloured bowl, a dark slate surface, a handful of fresh cilantro, a wedge of lime: each one creates the chromatic gap that the sauce alone cannot provide. Indian food photographers recommend serving dark curries on lighter plates and lighter curries on darker surfaces so the boundary between dish and vessel is visible at any compression setting.

  1. White or pale ceramic bowl, dark stone or slate surface
  2. Copper or brass vessel, mid-toned wood surface with visible grain
  3. Dark bowl, light linen or pale stone surface

These three combos do not require any new equipment. A concrete floor tile, a wooden chopping board, or a sheet of dark card from a stationery shop all work as a surface.

How to control the oily sheen on Indian curry photographs

Oil is the reason Indian curry smells and tastes the way it does. Ghee, mustard oil, tempered cumin in sunflower oil: the fat separates slightly as the curry rests and pools at the edges and surface. On the palate this is desirable. In a photo under front-facing light, it turns the surface into a mirror that catches the phone's lens flare and wipes out all the texture underneath.

Side lighting at roughly 45 degrees is the solution most food photographers describe for managing oily sheen. The light rakes across the surface at an angle, and the oil becomes a specular highlight rather than a blown-out patch. You want the oil to gleam, not glare. A window on your left at 45 degrees, the bowl at the centre, and a sheet of white A4 paper on the right as a fill reflector: this setup costs nothing and is reproducible in any restaurant kitchen.

What to avoid: shooting under overhead restaurant lights. The bulbs sit directly above, the oil surface acts as a flat mirror, and the camera averages all the brightness into an overexposed centre and crushed edges. Move the bowl to the window. The restaurant's ambient lighting is for diners, not cameras.

If the oil separation is extreme, stir the curry once lightly before shooting to redistribute. Photograph immediately after stirring, before the fat re-separates. The surface reads as rich and uniform rather than broken.

Indian curry garnish is not decoration, it is colour architecture

This is the most actionable section for any Indian restaurant owner with a phone and five minutes.

Fresh cilantro is the single most valuable tool in Indian food photography. A tablespoon of chopped leaves scattered across the surface of a butter chicken adds a green layer that breaks the monochrome and creates focal points your eye follows across the frame. Indian food stylists consistently use cilantro and curry leaves as deliberate colour elements, not as an afterthought plucked from a bunch in the fridge.

Three garnishes that work for almost every curry:

Cilantro or fresh curry leaves. Place them in clusters, not dust. Four or five intact leaves with visible stems photograph as a recognisable herb. Scattered flakes read as green bits.

A wedge or half-slice of lime. The acid yellow-green against orange or red curry is a direct complementary contrast. It also communicates freshness and acidity, which matters on a delivery app where the customer cannot smell the dish.

Red chili oil or whole dried chilies. A thin drizzle of red chili oil around the edge of the bowl, or two whole dried chilies resting on the surface, adds a red element that pops against the brown background. For dishes like dal, where the base colour is closer to ochre, this single addition can rescue a flat photo.

One garnish to avoid: cream or yoghurt swirled as a "finish". Cream swirls look beautiful in editorial photography with controlled studio light. On a phone, they go grey and flat. Use a single cream dot placed at the 11 o'clock position of the bowl if you need the dairy signal, and keep it small.

How naan and roti placement changes Indian curry composition

Bread does two things in a curry photo that the curry alone cannot do: it adds a different texture and a different colour range. Naan is pale, slightly charred at the bubble edges, and has a matte surface that absorbs light instead of reflecting it. Next to a glossy curry bowl, naan breaks the visual monotony.

Indian food photographers recommend including flatbreads alongside meat curries specifically to provide context and interrupt the single-tone sauce field. The key is placement. A whole naan flat on the surface becomes a pale disc that reads as empty space. Fold it in half and lean it against the curry bowl at the 3 o'clock position, charred side facing the camera. The standing fold shows height, the char marks show heat, and the pale interior curves forward into the frame.

For roti, the same logic applies but the circumference is smaller. Stack two rotis slightly offset behind the bowl rather than placing one flat. The staggered edge creates a layered shape that photographs cleanly from a 30-to-45-degree angle.

Rice in a separate bowl is almost always better than rice in the curry bowl for photography. Combined, the rice absorbs the sauce and the two textures compete. Separate, each reads clearly: the curry keeps its saucy surface and the rice in its own bowl shows grain definition. Place the rice bowl at the back-left and shoot from a 30-to-45-degree angle so both bowls are in frame. The composition for a thali or multi-bowl Indian spread works best from a slight overhead angle, where the arrangement reads as intentional rather than crowded.

Copper and brass props for Indian curry photography

Copper and brass are the two prop materials that consistently upgrade Indian curry photographs without requiring a stylist or a studio. The reasons are practical, not aesthetic.

Copper bowls have a warm reddish-orange colour that echoes the spice notes in most curry sauces. The saturation of the metal complements the dish rather than competing with it. Brass is cooler, more gold-toned, and reads better under warm artificial light or against darker surfaces. Indian food photographers specify copper and brass as the correct serving hardware for North Indian thalis, and the reason shows in the final image: the reflective surface adds depth and the warm metal tone anchors the colour palette.

A note on surface condition: new, highly polished copper reads as shiny and generic. Slightly patinated copper or brass with visible oxidation around the rim reads as authentic and well-used. If your copper bowls are brand new, use them for a week before photographing. Slightly tarnished metal photographs better than new, glossy items because the surface variation catches light at different angles and creates dimension.

For restaurants that do not own copper or brass service ware, a mango wood board as the surface underneath a ceramic bowl adds enough warmth and grain to shift the photo out of the generic delivery-app look. The wood grain runs horizontal across the frame and provides a natural texture that dark or white backgrounds cannot.

Camera angle for Indian curry changes by dish type

There is no single best angle for Indian food, but there is a worst one: front-on, at the same height as the bowl rim. This angle hides the sauce surface entirely. All you see is the bowl wall and a thin strip of curry at the top.

For single-bowl curries, the best angles are overhead at 90 degrees or a moderate tilt between 30 and 45 degrees above the rim. Overhead shows the full sauce surface and every garnish element clearly. The 30-to-45-degree tilt shows the sauce surface and the bowl depth simultaneously. Indian food photographers recommend the tilt for creamy curries like butter chicken where the surface texture is part of the appeal, and overhead for thinner, more liquid curries like rasam or dal where the colour reads better flat.

For a multi-bowl spread, overhead is the only angle that shows all elements equally. A 45-degree tilt on a five-bowl table turns three of the bowls into partial silhouettes.

Dry dishes change the rule. Tandoori chicken, seekh kebab, paneer tikka: these are textured, three-dimensional dishes where a 45-degree side angle reveals the char, the grill marks, and the surface crust that make them look cooked. Overhead turns them into flat shapes.
