How to photograph sushi without a studio: what works on a phone

What we have learned about photographing sushi for menus and delivery apps in our own testing. Smartphone-first, no studio.

Sushi is the hardest cuisine we photograph. Pizza is forgiving. Sushi is not: a rice grain out of place reads as sloppy, the lacquered black plate behaves like a mirror, the salmon goes from glossy to oily depending on the light by half a stop, and a soy-sauce glint on a maki roll can become the whole photo. We have generated images for sushi restaurants across the Netherlands, Belgium and Germany on FoodPic.ai, and the patterns are different enough from our pizza guide that sushi gets its own playbook. Here is what we tell sushi-restaurant owners when they ask how to do this on a phone.

Sushi photography lives or dies on rice grain detail

The first thing we tell every client: sushi is a rice dish. The fish is the headline, the rice is the photograph. Most professional sushi photographers point out the same thing, that rice is the main ingredient and the focal point your camera should resolve cleanly.

In practice on a phone: rice grains need to be individually visible at thumbnail size. Too far away or too much digital zoom turns the rice into a beige blob and the piece reads as plastic. Use 1.5x to 2x optical zoom (iPhone 14 Pro and up call it "telephoto"), at 25 to 30 cm from the piece. Closer than that, the wide-angle distorts. Further, the grain detail dies.

Hold the phone upside down so the lens is at the bottom. The Sushi Town Toyama photography guide makes this point: inverting the phone drops the lens to plate height, which a normal phone grip cannot reach without tilting.

Sushi lighting is side light at 45 degrees, never front light

The biggest mistake we see is shooting sushi under the warm halogen lights most restaurants run for the dining room. The light hits from directly above so the fish goes flat, and the colour temperature pulls everything into yellow-orange. The salmon stops looking like salmon and starts looking like ham.

Move the sushi. Physically walk the plate to a window between 10:00 and 15:00. North-facing windows are cleanest, no direct sun. South-facing windows need a sheer curtain or a sheet of baking paper taped over the glass.

Side light at roughly 45 degrees is the consensus in sushi photography because it reveals fish texture and individual rice grains at the same time. Front light flattens. Back light silhouettes. A 45-degree side rake hits the slope of the nigiri and the side of each grain.

Sushi on a dark plate needs an off-camera reflector

Black lacquerware is beautiful in person and a nightmare in photos. The plate goes pure black on most phones because auto-exposure averages the scene, picks the bright fish as the subject, and crushes the plate to shadow. The piece floats in void.

Two fixes. First, tap the dark area of the plate on your phone screen to set exposure there, not on the fish. Phones recover highlights better than shadows. Second, prop a sheet of white A4 paper opposite the window, against a glass or salt cellar. That bounces a stop of fill into the shadow side, and the lacquer reads as a deliberate plate instead of a black hole. The general principle dark-food photographers describe is that low-contrast dark images need midtones, not crushed blacks.

Sushi soy-sauce glint should be controlled, not eliminated

A brush of nikiri on a piece of nigiri gives the photo its sense of "just made". Without it, the piece reads dry. With too much, the surface becomes a mirror that catches the window and ruins the shot.

Our method: one brush across the top, then rotate the plate slowly until the brightest specular reflection sits on the slope of the fish, not the flat top. Glint on the top reads as wet plastic. Glint along the slope reads as fresh, glossy fish. This is the same principle photographers describe for cutting glare on shiny ingredients, with or without a clip-on polariser.

For the soy dish on the side, half-fill it. Full reads wasteful, empty reads fake. Half-full plus chopsticks resting at a 30-degree angle is the composition that sells.

Sushi camera angles change between nigiri and maki

Nigiri has height. The fish drapes over the rice, the rice has a slight slope, and the wasabi underneath gives the piece a shape that only reads from the side. Shoot nigiri at 15 to 25 degrees above the plate. Closer to overhead flattens the piece into a tile. Closer to horizontal hides the rice, which is the part that signals craftsmanship.

Maki rolls are flat wheels. They want the 90-degree overhead shot, like pizza: flat geometry, cross-section pattern reads cleanly from above. Sashimi sits in between: 30 to 45 degrees for a fan arrangement, overhead for stacks or rows.

For combination platters, pick the angle for the dominant piece. A 12-piece nigiri set with two cucumber rolls on the side gets the side angle. A chirashi bowl with three pieces of nigiri on top gets the overhead.

Sushi garnishes are wasabi, ginger, and shiso, and they are part of the composition

Pickled ginger, wasabi and shiso are not decoration. They are the colour palette. Pink ginger plus green wasabi plus dark green shiso against white rice and orange salmon is the entire reason sushi photographs well at all. Strip them and you have beige rice on a black plate, which reads as nothing at thumbnail size.

Mound the ginger, do not pile it loose. A loose pile reads as messy at low resolution. A mounded heap with a clear silhouette reads as a deliberate element. Wasabi works the same way: a small clean cone with a pointed tip, not a smear.

Place the shiso leaf under the sashimi, not next to it, so the green sits directly behind the fish and creates contrast that survives JPEG compression. Most sushi food stylists work this way, and it is the difference between a composed photo and one plated by a tired kitchen at 22:00.

Sushi delivery thumbnails need a lighter background than dining-room shots

The fine-dining sushi look is moody dark plate, dramatic side light, deep shadows. That look does not work at 200 pixels in a delivery app. Thuisbezorgd, Uber Eats and Deliveroo crop to a 1:1 square and compress hard, and a moody dark photo turns into a muddy black square.

For delivery menus we shoot on a lighter surface: pale wood, a stone slab, or a white linen napkin under the plate. The fish stays the focal point because it is still the brightest, most saturated element, but the background does not collapse into noise. Shoot with 10 to 15 percent margin on all sides so the platform crop does not slice the plate edge.

The dark-plate version is for the website hero and Instagram. The lighter, cropped-square version is for the delivery menu. Two different photos for two different jobs.

When AI sushi photos make sense and when they fail

Direct take: sushi is the cuisine where AI generation has the most room to fail. Pizza, burgers, noodle bowls all have looser geometry than nigiri. Each grain of rice has a position, the fish drape has to land in a specific way, the wasabi cone needs to sit just so. Generated sushi photos sometimes render the rice as a uniform mass, or place the fish on the rice at an angle a sushi chef would never use.

Where AI works well for sushi: maki rolls, chirashi bowls, donburi, dragon rolls, anything where the cross-section or bowl arrangement matters more than individual grain detail. Where it still struggles: traditional Edo-style nigiri at fine-dining resolution.
